The Secret to the Best Stuffed Peppers
Miki's Stuffed Peppers
Ingredients
- 1.8 lb (800 g) ground pork
- 3 bunches of green onions
- 1 red onion
- 1 large carrot
- 1 cup rice
- Fresh bell peppers for stuffing
- 2.1 cups (0.5 l) tomato juice
- Water as needed
- Ground sweet red paprika
- Salt and pepper to taste
- Vegeta or universal seasoning to taste
- Bay leaf
- A pinch of dried basil
- A pinch of sugar
- A little oil for frying
Steps
- Wash, clean, and finely chop the green onions, red onion, and large carrot.
- Wash the rice thoroughly in cold water and let it drain.
- Heat a little oil in a pot or deep skillet over medium heat.
- Add the chopped green onions, red onion, and carrot, and sauté for 4-5 minutes until the vegetables soften and become translucent.
- Add the ground pork to the sautéed vegetables and break it up well with a wooden spoon.
- Stir in the drained rice, ground red paprika, salt, pepper, a little Vegeta, basil, and a bay leaf.
- Mix everything well and simmer for a few minutes until the meat is nicely combined and browned with the spices.
- Remove the filling from the heat and let it cool down enough so you can handle it easily.
- Wash the peppers, remove the stems, and core out the seeds.
- Stuff the prepared peppers with the meat filling. If you have any filling left over, you can stuff it into small cups or potato pieces and place them between the peppers in the pot to cook together.
- Arrange the stuffed peppers in a deep pot or baking dish.
- Pour about 0.5 liters of tomato juice over them and add enough water so the liquid almost covers the peppers, along with a little salt and sugar to taste.
- Add a bay leaf and, if desired, place a few thin slices of bacon on top of the peppers for extra flavor.
- Cover the pot or baking dish, and place it in a preheated oven to simmer and bake slowly for about 90 minutes at a moderate temperature.
- Check the liquid level occasionally, and uncover toward the end so the top browns nicely.
- Take the finished peppers out of the oven, let them rest for 10 minutes, and serve warm with sauce and homemade bread.
