Old-Fashioned Semolina Cake (Koh)

Ingredients

  • 8 eggs
  • 9 tbsp sugar
  • 8-9 tbsp semolina
  • 1 tbsp flour
  • 1.5 liters milk
  • 2-3 packets vanilla sugar
  • 6 tbsp sugar (for the milk soak)
  • a little oil and flour for greasing the baking pan

Steps

  1. Prepare all ingredients and separate the egg whites from the yolks.
  2. Beat the egg whites into a stiff meringue using an electric mixer.
  3. Gradually add 9 tablespoons of sugar while continuing to beat until completely dissolved and the mixture becomes glossy.
  4. Add the egg yolks one at a time, beating at a lower speed until combined.
  5. Add the semolina and 1 tablespoon of flour to the beaten mixture, and gently fold in with a spatula.
  6. Grease a baking pan with oil and dust it with a little flour.
  7. Pour the mixture into the pan, spread it evenly, and smooth the surface.
  8. Bake in a preheated oven at 180-200 degrees Celsius for about 25 minutes until golden brown.
  9. Pour 1.5 liters of milk into a pot, add 6 tablespoons of sugar and the vanilla sugar, and bring to a boil.
  10. Take the hot baked cake out of the oven, and pour the warm sweetened milk evenly over the warm cake.
  11. Allow the cake to absorb the liquid and cool down at room temperature, then place it in the refrigerator to chill thoroughly before serving.
