Hummus and Baba Ganoush

Homemade Hummus with Wild Garlic

Ingredients

  • 14 oz (400 g) cooked chickpeas (garbanzo beans)
  • 5-6 cloves of garlic
  • a few leaves of wild garlic
  • fresh parsley
  • 2 tbsp tahini paste (sesame paste)
  • juice of half a lemon
  • 0.4 cups (1 dl) olive oil
  • cold water as needed
  • salt to taste

Steps

  1. Wash and chop the fresh parsley and peel the garlic.
  2. Place the cooked chickpeas, garlic, parsley, and wild garlic into a blender.
  3. Add the tahini paste, freshly squeezed lemon juice, olive oil, and a little cold water.
  4. Blend gradually until the mixture becomes completely smooth and creamy.
  5. Add salt to taste and a little more oil or water if it is too thick, then blend again.
  6. Transfer the hummus to a serving dish, smooth the surface, and garnish as desired.
