Mlinci and Banana Roll
Miki's Style Chicken with Mlinci
Ingredients
- 1 chicken breast or 1 whole chicken cut into pieces
- 1.1 lb (500g) mlinci (traditional dried flatbread pasta)
- 5 eggs
- 7.1 oz (200g) homemade cottage cheese (Schabziger / quark style)
- 0.8 cups (200ml) milk
- 3.5 oz (100g) smoked kachkaval cheese
- Dried mixed vegetables without additives (carrot, celery, parsley, onion)
- Salt and pepper to taste
- Oil for greasing and frying
Steps
- Prepare and cut the chicken into smaller pieces, then season with salt and pepper.
- Add the dried vegetable mix to a pot of water and bring to a boil to create a flavorful broth.
- Heat a little oil in a skillet and briefly sear the chicken on all sides until browned, keeping it juicy on the inside.
- Drop the mlinci into the boiling vegetable water to soften and briefly cook, then remove them.
- In a deep bowl, beat the 5 eggs, add the cottage cheese, milk, salt, pepper, and grated smoked kachkaval, mixing everything well into a filling.
- Grease a baking dish with oil.
- Layer the first row of cooked mlinci on the bottom of the baking dish.
- Distribute a portion of the fried chicken over the mlinci.
- Repeat the layers of mlinci and chicken until all ingredients are used.
- Pour the prepared egg, milk, and cheese filling evenly over everything.
- Grate a little more smoked kachkaval on top and sprinkle with parsley and pepper.
- Bake in a preheated oven at 392°F (200°C) (400°F) for about 25 to 30 minutes until nicely browned and bubbly.
- Remove from the oven, let cool slightly, cut into squares, and serve warm.
