  • 1.1 lb (500 g) flour
  • 14 oz (400 g) crumbled farmer's cheese (or cottage cheese)
  • 8.8 oz (250 g) butter (room temperature)
  • 1 baking powder
  • 1 teaspoon salt
  • 2 eggs (for brushing)
  • Sesame seeds or caraway seeds as desired

Steps

  1. Prepare all ingredients and your work surface.
  2. Place the softened butter in a deep bowl and mash it well with a fork.

  4. Use your hands to combine the butter and cheese into a smooth mixture.
  5. Mix in the baking powder and flour.
  6. Knead by hand into a soft, smooth dough that does not stick, with no need for a long resting time.

  8. Use a glass or cookie cutter to cut out biscuits and arrange them on a baking sheet lined with parchment paper.
  9. Brush each biscuit with beaten egg yolk.
  10. Sprinkle with sesame or caraway seeds if desired.
  11. Bake in a preheated oven at 392°F (200°C) (400°F) for about 20 to 25 minutes until golden brown.
