Tomato Soup with Turkey

Ingredients

  • 14 oz (400 g) turkey
  • 1 onion
  • 2 carrots
  • a little celery
  • parsley root
  • oyster mushrooms
  • tomato juice
  • water
  • pepper
  • spice mix / chicken seasoning
  • oil

Steps

  1. Prepare and wash all the vegetables, then finely chop the onion, carrots, celery, parsley, and oyster mushrooms.
  2. Cut the turkey meat into small cubes.
  3. In a pot with a little oil, sauté the chopped onion, celery, and carrots, stirring occasionally until the vegetables soften a bit.
  4. Add the chopped oyster mushrooms and parsley to the pot and simmer everything together for another 5-6 minutes.
  5. Season the vegetables and mushrooms with a little pepper and spice mix to taste.
  6. Add the chopped turkey to the pot to fry together with the vegetables until the meat changes color.
  7. Pour in water and add tomato juice depending on the desired thickness of the soup.
  8. Reduce the heat and let the soup simmer for about half an hour until all ingredients are completely tender and flavors are combined.
  9. Remove the soup from the heat, let it cool slightly, and serve warm.
