Quick and Juicy Orange Bundt Cake

Ingredients

  • 2 whole oranges
  • 4 whole eggs
  • 1.5 cups sugar (about 1.3 cups (300 ml))
  • 1 vanilla sugar
  • 1 cup oil (0.8 cups (200 ml))
  • 1 cup yogurt (0.8 cups (200 ml))
  • 3 cups flour (0.8 cups (200 ml) each)
  • 1 baking powder
  • 2 tbsp cocoa powder
  • 2 tbsp milk (to thin the cocoa mixture)
  • margarine and flour for greasing the pan
  • powdered sugar for dusting

Steps

  1. Wash the oranges in water with baking soda, then cut them into wedges and remove the white pith.
  2. Place the cut oranges into a food processor and chop them into coarse pieces.
  3. In a deep bowl, beat the 4 whole eggs with a mixer until they become foamy and bubbly.
  4. Add the sugar and vanilla sugar to the beaten eggs, and beat for about 10 minutes.
  5. Pour in the oil (1 cup) and yogurt (1 cup), and combine the liquid ingredients.
  6. In a separate bowl, mix the flour with the baking powder and sift through a sieve.
  7. Add the sifted flour to the liquid mixture and gently fold with a spatula until smooth and lump-free.
  8. Separate about 1/3 of the prepared batter into a smaller bowl for the marbled layer.
  9. Add the 2 tablespoons of cocoa and 2 tablespoons of milk to that third of the batter, and mix well until combined.
  10. Add the chopped oranges to the remaining larger batch of batter and mix well.
  11. Grease a Bundt pan thoroughly with softened margarine and dust with flour, tapping out the excess.
  12. Pour a portion of the yellow orange batter into the bottom of the pan.
  13. Pour the chocolate cocoa batter over it, then cover with the rest of the yellow batter.
  14. Swirl a knife or skewer through the layers to create a marbled pattern.
  15. Bake in a preheated oven at 392°F (200°C) (400°F) for about 30 to 35 minutes, until a toothpick inserted into the center comes out clean.
  16. Remove the baked Bundt cake from the oven, let it cool briefly, then carefully invert it onto a serving plate.
  17. Dust the top with powdered sugar, let it cool down a bit more, slice, and serve.
